In the cold winter months, according to The Five Element Theory, the kidneys are our most vulnerable organ in the body. Here is a recipe for a drink to tonify and balance kidney qi during this time.

To serve one person for three days:

Soak 1/4 cup black sesame seeds for 2 hours and drain.

Soak 1/2 cup dried wood ear mushrooms for 2 hours and drain and chop.

Soak 1/4 cup walnuts for 2 hours and drain.

Soak 1/4 cup of Chinese wolfberries (goji berries) for 1/2 hour and drain.

Add all ingredients to 2 pints of water and bring to a boil. Add more water if needed. Simmer for half an hour. When cool, blend and drink 3 times during the week between 3 and 7 pm when energy is circulating through bladder and kidney meridians. Drink at room temperature, or slightly warm, with honey to taste.
